Preparation of Ingredients
Cut the pork trotters into pieces and blanch in oil; set aside.
Cut taro into chunks and steam until cooked; set aside.
Chop cilantro and green onions; set aside.
Cut the pickled and green chilies into sections; set aside.
Cooking Steps
In a pot, heat salad oil and sauté the Spicy Crayfish Seasoning until fragrant. Add water and pork trotters, then transfer to a pressure cooker and cook for 15 minutes until tender.
Transfer the cooked trotters from the pressure cooker to a frying pan, add the taro, and adjust the seasoning. Cook until well combined, then add the pickled and green chili sections.
Once flavorful, drizzle in chili oil, sesame oil, and Sichuan peppercorn oil. Serve in a preheated stone pot, garnished with chopped green onions and cilantro.
