  3. Preparation of Ingredients

    Cut the chicken into pieces, marinate with salt, pepper, cooking wine and soy sauce, and briefly fry them for later use.

    Cut small green chilies into sections, and cut onion and shiitake into pieces for later use.

    Slice ginger, dice leek onions, and smash garlic for later use.

    Heat a claypot.
  4. Cooking Steps

    Put the salad oil into the pot, add dried chili and Sichuan peppercorns, and stir fry until fragrant. Add ginger, green onions and garlic, and add thick broad-bean sauce and stir fry until fragrant.

    Add hot pot base and water. Put in the chicken pieces, bring to a boil over high heat, turn to moderate heat, and cook for about 5 minutes.

    Add asparagus lettuce, shiitake, cook thoroughly. Add onion pieces and green chili sections. Add sesame oil, Sichuan peppercorn oil and chili oil.
